Decadent Chocolate Mousse
Ingredients: Serves 6
280g plain chocolate
1 tbsp Baileys Irish cream
1). Break the chocolate into squares and place in a heatproof bowl setting over a pan of simmering water until melted. Remove from the heat and leave to cool.
2). Whisk the eggs with the baileys Irish cream in a separate heatproof bowl over the pan of simmering water until it has doubled in size.
3). Whisk the cream in a bowl until you have reached soft peaks. Fold the melted chocolate into the egg mixture and allow to cool for 5 minutes and then fold in the whipped cream until well combined. Divide the mixture among serving glasses or china cups & saucers, chill for at least 4 hours or overnight is best.
Garnish with orange zest and chocolate flakes and serve with some little sable biscuits dusted with icing sugar
